FABIEN DE BRUYN
Fabien De Bruyn is a supporter of responsible and local cuisine, working together for years with artisans from the Corbières (Les jardins d'Estarac, Vinaigrerie de Cyril Codina, etc.), he is also the chef representing the AOC Minervois and head of poster of the Taste en Minervois festival (30,000 visitors).
VALENTIN RENAUD
He began with CAP Pâtissier studies at the hotel school in Perpignan, discovering at the same time the magnificent riches of the Lagrasse terroir which he will always remain fascinated with. And will continue in the bakery "Le Moulin", he will continue with training with the Meilleur Ouvrier de France Laurent Dûchene. As well as in Annecy, at the gourmet restaurant L'Ancolie by chef Yves Lefebvre. And will continue at Gaïa in 2018 In Narbonne.
