Who is Coralie Coms?
Coralie Coms is the pastry chef and creator of 'La Maison de la Pâtisserie' in Cabestany.
Coralie graduated as an industrial designer before meeting Michelin-starred chef, Régis Macron who inspired her to become a creative chef.
Initially self-taught in the kitchen, she trained at the Maison d'Hélène Darroze and Monsieur André Le Letty and then specialised in pastry, training with Meilleur Ouvriers de France. She then met Christophe Adam, the founder of L’Eclair de Génie, and went to Hong Kong and then to South Korea to open franchises. Coralie grew up in Paris but her roots and her family are in the Pyrénées-Orientales. Hence the reason she decided to return south and open her business.
Training with Christophe Adam
Undisputed pastry icon and recognized by his peers, Christophe Adam launched L’Eclair de Génie in 2012, a concept entirely devoted to éclairs, his signature pastry which became a resounding success in Paris and internationally. He crafts desserts with great finesse and elegance in his Parisian laboratories. Author of several books in which he revisits the classics of French pastry in a contemporary way, Christophe Adam was named "Best Pastry Chef of the Year" in 2014 by the Pudlo guide and voted "Best Pastry Chef 2015" by Relais Desserts.
